Winter Melons: Selection – Harvest to Table

Honeydew, casaba and Cavaillon melons are classed as winter melons on account of they ripen additional slowly than other melons and are in most cases not ready until late fall. After harvest, they even continue to ripen in storage.

Make a choice. Honeydews should have a blank, lightly yellow rind that is reasonably green at the stem end. Seek for honeydews which might be oval or elongated. Casabas have a rough green or green and yellow pores and pores and skin. Cavaillons are reasonably elongated with a finely ribbed rind. Some believe they are the tastiest of this team of workers.

Serve. Season winter melon slices with salt and freshly floor pepper.
